I had to manually enable CSM mode to get my NVMe drives to work on this new motherboard and I didn't give it much thought as to why I needed to do that. With it disabled, my system would just boot straight to bios. So for me, once I switched it to GPT, I just F2'd to bios on reboot, disabled CSM and I was good2go.
